Ingredients

  • 500 g of roasted meatloaf

  • 4 medium potatoes

  • 2 large carrots

  • 1 onion

  • 2 tablespoons of olive oil

  • 1 teaspoon of rosemary

  • 1 teaspoon of sweet paprika

  • Salt and pepper

Procedure

  1. Preheat the oven to 190 °C (preferably with fan).

  2. Cut the potatoes, carrots, and onion into small cubes or slices.

  3. Toss the vegetables with oil, spices, salt, and pepper in a baking dish.

  4. Cover (e.g., with foil) and bake for about 30 minutes.

  5. Then add the sliced meatloaf, uncover, and bake for another 15–20 minutes until golden.

  6. Serve warm – the meatloaf will be heated through, and the vegetables soft and roasted.
