Ingredients

  • 4 slices of our roasted meatloaf

  • 2 tablespoons of oil

  • 2 tablespoons of all-purpose flour

  • 1 liter of broth or water

  • 3–4 tablespoons of tomato paste

  • 1 teaspoon of sugar

  • salt, pepper

  • 2 allspice berries, 1 bay leaf

Side:

  • pasta (e.g. elbows or fusilli)

Tomato sauce with meatloaf

Procedure

  1. Sauce: Sauté the flour in oil until light golden to make a roux. Add the broth, whisk until smooth, then stir in tomato paste, spices, sugar, and salt. Simmer for 15–20 minutes, strain, and adjust seasoning.

  2. Pasta: Cook in salted water according to package instructions.

  3. Meatloaf: Slice and reheat in the sauce or in the microwave.

  4. To serve: Combine pasta, meatloaf, and tomato sauce on a plate.
