Tomato sauce with meatloaf

Ingredients

4 slices of our roasted meatloaf

2 tablespoons of oil
-
2 tablespoons of all-purpose flour

1 liter of broth or water
-
3–4 tablespoons of tomato paste

1 teaspoon of sugar
-
salt, pepper
-
2 allspice berries, 1 bay leaf
Side:
-
pasta (e.g. elbows or fusilli)

Procedure

Sauce: Sauté the flour in oil until light golden to make a roux. Add the broth, whisk until smooth, then stir in tomato paste, spices, sugar, and salt. Simmer for 15–20 minutes, strain, and adjust seasoning.

Pasta: Cook in salted water according to package instructions.

Meatloaf: Slice and reheat in the sauce or in the microwave.

To serve: Combine pasta, meatloaf, and tomato sauce on a plate.
